Mincha began with a simple idea: make beautiful food feel warm, generous and personal. Raymond brought together his love of good matcha, joyful bakes and the kind of café where people want to stay a little longer.

We look for matcha with colour, character and a clean finish, then let it shine in drinks and bakes without hiding what makes it special.
